In Minnesota, you’ll find wild rice in all kinds of dishes, but it’s hard to imagine a more classic or more cosmopolitan dish of Creamy Chicken and Wild Rice Soup.
Come Home For Creamy Chicken and Wild Rice Soup
If you’ve ever ordered a pan of wild chicken rice soup, you have an idea of what simmered chicken and cream soup will taste like, but like many recipes, the homemade one really is the best.
Fortunately, thanks to the crockpot, this is an easy chicken and rice soup. There’s a bit of stovetop stir fry to make a cream sauce that you pour into the slow cooker, but it’s quick, simple, and worth the effort.
Like all ceramic soup, many other ingredients, including chicken and rice, are cooked in a crockpot. (Another similar favorite: Ceramic Lentil Soup with Chicken and Rice!)
The sauce makes the Wild Chicken Rice Soup taste like the heavy cream in the recipe (think Pioneer Woman / Paula Deen), but it’s made with flour and low-fat milk.
In a few weeks, I will be moving to another vacation home, my hometown of Wichita, Kansas.
Although I don’t have a single place that I can clearly define as “home” 100% of the time, the more I think about it, the less I need it. In fact, I am lucky to have so many places where I can relax, feel comfortable, have fame and love.

Recommended Tools for Making Creamy Chicken Wild Rice Soup
This is the slow cooker I have, which I like because it automatically becomes “hot” at the end of cooking, so the likelihood of it overcooking is less likely, although I would not recommend letting this food exceed its time too much, since both chicken breast (lean Wild rice can be cooked more easily.
Any slow cooker of 5 liters or more should work.

How to make this soup in the instant pot
This is the instant destiny that I have, and I adore it!
I have not tried this recipe in a speed cooker yet, but since I know many of you have added a speed cooker to your kitchen and are eager to use it, the following is my suggestion on how to adapt the recipe to an electric current pressure cooker. . If I tried it in an Instant Pot, I’d love to know how it went!
Set the Instant Pot to sauté and cook the carrots, celery, potatoes, and onions as instructed in Step 1. Continue with
Step 2, adding ingredients according to instructions to the Instant Pot. Cook on high pressure (manual) for 35 minutes.
If using a brown rice mix, cook for only 20 minutes. Release pressure manually. Prepare and stir the roux according to the instructions in Steps 3 and 4.
Ingredients for Creamy Chicken and Wild Rice Soup
2 teaspoons of extra virgin olive oil
3 medium carrots, peeled and diced (about 2 cups)
3 medium celery stalks, diced (about 1 cup)
1 small potato, peeled and diced (about 1 cup)
1 medium onion, minced (about a cup)
2 teaspoons poultry seasoning
1 teaspoon flavored kosher salt
¼ 12 teaspoon flavored black pepper
1 cup raw wild rice or brown wild rice mix
1 pound boneless, skinless chicken breast (about 3 medium breasts), not excess fat
5 to 6 cups low sodium chicken broth, divided
2 tablespoons unsalted butter
All-purpose flour cup
2 cups extra 2% milk as needed
Instructions Of Creamy Chicken and Wild Rice Soup
Coat a 5-liter or larger slow cooker with nonstick cooking spray. Heat the olive oil in a large nonstick skillet over medium heat. Add carrots, celery, potatoes, and onions and cook until vegetables are tender, about 8 to 10 minutes.
Add the poultry seasoning, salt, and pepper and cook an additional 30 seconds. Remove from heat and transfer to the bottom of the slow cooker.
Rinse the wild rice, then add the veggies to the slow cooker. Place the chicken breasts on top and then pour in 4 cups of the chicken broth. Cover and cook on low for 6 to 7 hours or on high for 2 to 3 hours, until the rice is cooked and the chicken is tender.
Lift the chicken onto a plate or cutting board and let it cool slightly. Using two forks or fingers, mince the chicken, then return to the slow cooker. Put it on a simmer to keep it warm. If the chicken finishes cooking before the rice is done, remove it first so it’s not too mushy, then re-cover the slow cooker and continue cooking until the rice is done.
Once the chicken and rice are cooked, melt the butter in a medium saucepan over medium heat. Once the butter has completely melted, sprinkle flour on top. Beat and cook until the flour is golden brown, about 1 minute. Pour into 2 cups of milk a few drops at a time and mix as you go to remove any lumps.
Bring to a boil over low heat, then reduce heat to a simmer. Cook, stirring frequently, until thickened, about 4 minutes.
Pour the milk mixture into the slow cooker and stir. For a finer soup, stir in more chicken broth until it reaches your desired consistency. Tasting Add salt and/or pepper to taste. Serve hot.
Notes For Creamy Chicken and Wild Rice Soup
Keep leftovers in the refrigerator for up to 5 days or freeze for up to 3 months. Let it thaw overnight, then microwave or stovetop with more chicken broth, milk, or water to reduce soup to taste.
To Make Dairy Free: Replace the butter with vegetable butter and the milk with unsweetened soy milk or almond milk. Note that the mixture may not be creamy or may take longer to thicken.
To make the gluten-free flour: discard the flour in step 3. With a fork, vigorously mix 1/4 cup cornstarch into the milk before adding the milk to the melted butter. Stir until blended and simmer, stirring constantly, until hard.
