GREEK YOGURT CHICKEN: From chilled grapes to sweet blueberries, this lighted sandwich won’t even taste healthy.

This is one of my favorite ways (and the easiest, DUH!) To make a light and healthy lunch when I’m in a hurry.

All you need is some leftover grilled chicken from the night before, Greek milk, some grapes, and apples, and you’re golden.

Yes, Greek yogurt. I promise.

You will not miss the mayonnaise. Absolutely.

  • 2 cups remaining grilled chicken
    1/2 cup red onion
    1/2 cup of chopped apple
    1/2 cup of grape halves
    1/4 cup dried cranberry
    1/4 cup of broken almonds
    1/2 cup plain Greek milk
    1 tablespoon of fresh lemon juice or more, if desired
    1/2 teaspoon garlic powder
    Kosher salt and freshly ground black pepper
    8 slices of bread
    4 Boston Pepper lettuce leaves


In a large bowl, mix together chicken, red onion, apples, grapes, dried cranberries, sliced almonds, Greek yogurt, lemon juice, garlic powder, salt, and pepper, to taste.
Serve sandwiches on bread, mix chicken, and lettuce.


Flavored chicken and GREEK YOGURT CHICKEN  marinade have not been thought of, but there are a few tricks to get it right.

1. Never, never, reuse marinade used in poultry or raw meat unless you boil it first:

It may seem like a good idea to level chicken or meat with the same marinade, but there is a trick to keeping it healthy if you do. Boil the saltwater used first to destroy any harmful bacteria. Or put some of the marinades aside for later use before putting raw meat and poultry on it.

2. Use the acid in the marinade:

Whether it’s vinegar, wine, or citrus juice like lemon or lemon juice, the acid helps break down the connective tissue in the meat, adds flavor, and creates a smoother bite.

3. Choose free oil for more flavor in the marinade.

Depending on the flavor profile of the marinade, choose the oil that complements it and further enhances the flavor, such as: Olive oil for Greek, Italian or Mediterranean dishes. Sesame oil for Asian-style dishes. Canola oil or vegetable oil for Mexican or American dishes to keep things neutral.

4. Add yogurt so that the chicken is tender.

The real secret of the offer is any piece of meat or chicken by adding milk or milk to the mix. It has been made for centuries in Indian cuisine with soft milk and yogurt in southern fried chicken. These two dairy ingredients have a milder acid level than some other raw enzyme acids than pineapple or papaya, making them ideal for chicken so they don’t soften.

How to make GREEK YOGURT CHICKEN brine

This Greek broth is my favorite recipe for anything and everything chicken and it does double duty as dressing for salads too.

Soak the chicken in half of this seasoning and keep the other half to grill skewers while cooking, if desired.

Chicken with enough flavor in just 15 minutes, or let it soak in all that Greek flavor for up to three hours in a closed gallon container or storage bag. In general, I only go for more than 3 hours to avoid the chicken from getting confused.

GREEK YOGURT CHICKEN seasoning ingredients

  • Greek Yogurt – This is a new addition to the regular Greek marinade. After adding Easy Chicken Gyros, I added the yogurt since the yogurt served the chicken for a very delicious bite.
  • Lemon Juice + Peel: Lemon acid also helps break down the tough fibers of chicken by adding delicious flavor to every bite. Adding a lemon peel to the seasoning adds more flavor.
  • Garlic: Because garlic is welcome.
  • Olive Oil: Olive oil adds a little fat and helps create a barrier while the chicken is grilling. However, you still want to grill with extra oil and rotate your skewers so that the chicken is not saturated or burned.
  • Oregano: Because dried herbs taste stronger than fresh ones, I found that dried thyme works best for this seasoning, and a healthy dose of it is definitely required.


We put the chicken pieces in the freezer bag or bowl and reserve them.

Add Greek yogurt and olive oil to a medium bowl. Grate the lemon and add it to the bowl. Squeeze this lemon into the bowl with humans. Cut the other three lemons aside. Add minced garlic, oregano, kosher salt, and black pepper to lemon juice, sprinkle, and stir.

Pour half of the marinade into a freezer bag or bowl with chicken pieces and save the other half of the marinade for baking. Soak the chicken in the refrigerator for 30 minutes or even 3 hours.

When you’re ready to roast, prepare the grill by lightly lubricating with vegetable oil or cooking spray and set over medium-high heat.

Roast the chicken with the roast with a reserved marinade and stir frequently until each side is browned and has slight grill marks until cooked through, 15-20 minutes or until the chicken juice is tender.

During the last five minutes of cooking, add lemon wedges to the grill, turning once or twice. Let the chicken rest for 5 minutes before slicing and serve with grilled lemon. Refrigerate leftovers for up to 3 days.
