I stole a trick from the turkey on Thanksgiving to keep the chicken completely moist while you grill it: soak the chicken before cooking.

Brine marinade consists of soaking the chicken in a marinade solution while adding additional flavors like spices and herbs.

Like the marinade, it flavors chicken and also uses the power of science to keep chicken more moist during cooking.

When you marinate the meat in the marinade, the solution moves through the meat by osmosis (thanks, Elementary School Science).

I recommend marinating the chicken for at least 30 minutes, and you can leave it for up to 8 hours. After 8 hours, the meat can start to fall apart a lot and have an odd texture.

2 tablespoons low sodium soy sauce
1 tablespoon apple cider vinegar or lemon juice
1 tablespoon of honey

1/2 teaspoon kosher salt

Grease the grill with oil, then place the chicken pieces on the grill in a layer without overlapping them, and discard the excess seasoning (discard the bag and the remaining pickles).
