I would say that sugar is only necessary if you use store-bought tomatoes. If you grow it yourself or buy it at the farmers market, the quality will be a little better and it will be a little sweeter, so no sugar is needed.

  • Fresh Roma Tomatoes – Use thin red tomatoes and avoid anything mushy.
  • Canned tomatoes – I like to use both canned and fresh because they give the sauce a better texture.

  • Jalapeño – This adds a nice kick. If you don’t like spicy, you can substitute a quarter cup of chopped paprika or take it out.
  • Red onions – Yellow onions can also be used here.
  • Green Onions – If you don’t want to buy both types of onions, you can omit the green onions and add a little red onion.
  • Garlic: It may seem small, but garlic tastes delicious. Use only fresh garlic for the best flavor.
  • Lima – This really lights up the sauce.
  • Chili Powder and Cumin: I don’t always add these, but it’s a great addition if you have one.
  • Sugar – Just a touch balances the acidity of the tomatoes and lime.
  • Salt and Pepper – The sauce will taste flat without the salt and the pepper will add a slight hint.

  • 2 green onions,** ends trimmed, chopped into thirds
  • 1/3 cup chopped red onion (about 1/4 of a medium)
  • 1 jalapeno pepper,*** seeded and roughly chopped
  • 1/3 cup fresh cilantro (about a handful)
  • 1 large clove garlic, roughly chopped
  • 2 Tbsp fresh lime juice
  • 1/2 tsp chili powder
  • 1/4 tsp ground cumin
  • 1/2 tsp granulated sugar (optional)
  • Salt and pepper to taste

Mix all the ingredients in a food processor and beat in waves for one second until all the ingredients are well minced.

Recipe Notes

Sliced canned tomatoes with mild green bell peppers or fire-roasted canned tomatoes also work great.
** For a slightly stronger onion flavor, you can omit the green onions and use about 3/4 cup red onions (or 1/2 medium onion).
Sometimes I like to substitute a few canned chipotle peppers for some jalapeño adobo sauce. This is a spicier option.
For a finer sauce, you can add a little tomato juice or tomato sauce if you like.
