What is Aloo Bhujia Veg Snacks Recipes In Hindi? Also known as Bhujia, it is a traditional crunchy snack made with potatoes, chickpea flour, moth beans, and spices. According To Hindi recipe, aloo Bhujia was first made in Bikaner city in Rajasthan, during the reign of Maharaja Shri Dungar Singh in 1877.

Over the years, it has become a popular snack all over India and is sold by many brands. The taste, texture, and flavor of aloo Bhujia vary from brand to brand.

I wouldn’t say this recipe will give you something similar to the prepackaged version. But it will definitely help you make the best Bhujia at home and you can easily customize the flavors to suit your taste.

I made aloo bhujia with 1 kg of ingredients. But I narrowed down the recipe for this post. So the amounts you find in the photos are double the recipe.

Potato Preparation For Veg Snacks Recipes In Hindi

1. Boil whole potatoes in a pressure cooker or saucepan, until soft. To cook in a traditional Indian pressure cooker, pour in 1 cup of water and place it on a rack or stand inside. Put the potatoes in a bowl and then in the pot. Pressure cooker for 4 whistles.

To cook in an instant pressure cooker, I cook on high pressure for 5 minutes. My potatoes were of different sizes but they were done to perfection.

2. Once the pressure is gone, peel the potatoes while they are still hot. Let them cool completely. Then give them a good grater.

3. Once done, run your fingers through the racks and make sure there are no lumps or crumbs from the potatoes as they will get stuck in a sword maker. Break up the crumbs, if any.

4. These are the spice powders I used. You can add everything to your liking.

Peppermint powder (see DIY tips below)

5. Place a colander over the grated potato. Sift all the powdered spices with salt. I was left with very few chunky particles of chaat masala and mint leaves that I threw away.

6. Mix all of these. The mixture will be very wet and sticky at this point.

7. Sift 2 cups (240 grams) together with a separate container. Measure out 1½ cup and spread over potato mixture. Heat 1 tablespoon of Kadai oil until very hot and pour it here quickly. I’ll breathe in the oil. With a spoon, first, mix the oil with the flour. Then mix everything well with your hand.

8. Mix everything well to get a hard, non-sticky paste. If the dough is still sticky, you can add more little by little. You will need a maximum of 250 grams of the base. Do not add the flour all at once as we cannot use water here. Your hands will be very sticky at this point, so apply your fingers if necessary. Taste the flavor and add more spices or salt as needed. Cover and reserve until the oil is hot.

9. Start heating the oil in the kadai over medium heat until hot. Meanwhile, generously lubricate a sword maker and fit the board/accessory with the smallest holes. Divide the dough into 2 or 3 pieces of wood and store 1 log in a spade.

10. When the oil is hot, taste it if it is hot enough. Drop a small portion of the dough into the oil. It should appear instantly without browning. This is the correct temperature.

11. Press sev maker to release Aloo Bhujia. Keep moving your hand slowly, in a circular motion. Since this dough is sticky, you will eventually use a spatula to break up a maker’s sword. Fry over medium heat. When it is a little stiff, turn everything gently and fry.

12. Tip: once you have fallen, check if the bouquets are intertwined. To fry them evenly, gently loosen the knots with a wooden stick or spoon. Only do this if necessary.

13. Aloo Bugia fries very fast compared to other snacks. It only takes 2 to 3 minutes. To remove them in time once they are crisp and lightly browned. Don’t blush to them.

14. Remove it to a steel strainer. Once cool, transfer to airtight containers.

Break it up and add it to the serving bowl. Sprinkle with chaat masala, black pepper, and mint powder.

Tips for making Veg Snacks Recipes In Hindi

  • Aloo bhujia is difficult to make with a pistol-shaped seven because the dough is sticky. Try to use a traditional maker because it is the easiest.
  • Avoid using water to make the dough. The trick here is to add flour only when necessary to soak up the moisture from the boiled potatoes. So we don’t need water at all.
  • A 1: 1 ratio of aloo & kiss works well for me. For 500g of aloo, I use 500g of flour. This can vary depending on the type of potato.
  • Fry Aloo Bugia only over medium heat. Since they are so thin, they fry very quickly.
  • Peppermint powder is available in Indian stores, but you can also make it at home. I dried 1 cup of mint leaves in the oven at 60 ° C (140 ° F) for 10 minutes and crushed it in my hand. You can also skip it if you don’t prefer it.
  • You can omit the garlic powder if you don’t have it.
  • Don’t skip adding chaat masala to fried aloo bhujia. This is the main flavor enhancer.
  • You can also make a thick sword with the same mass. Fry it over medium heat for a longer time.

  10. Squash them gently to break them. Sprinkle chaat masala, black pepper, and peppermint powder over the aloe bhujia.
